Most Asian countries have their own version of fried rice; Thailand has pad Thai, China has chow mein, Indonesia has nasi goreng, Vietnam has cơm tấm and the list goes on and on! But what makes Vietnamese red rice different? Well, instead of regular white steamed rice, it’s actually just regular white rice that’s been cooked in tomato sauce! This turns it into more of a stir-fry than regular fried rice which is what makes it so much quicker to make and perfect for busy weeknights.
What you need
You will need to fry up the tomato rice with garlic for a few minutes. Once that is done, add in your peas, ham and egg. This recipe is super easy to make with only three ingredients! Once you’re done frying up your rice, it’s ready to eat! You can eat it as-is or serve it with some soy sauce for added flavour. My personal favourite way of eating this fried rice dish is by adding a fried egg on top of it. How to make it

It can also be turned into vegetarian food by swapping out the meat for tofu or tempeh. Or made vegan by removing the eggs from the dish. Before serving
1. Heat the oil in a pot over medium heat. Add the garlic, onions and ham to the pan and fry until the onions are translucent. Add the rice, tomatoes, sugar, salt, peas and water then stir to combine.
2. Bring to a boil then cover with a lid, reduce heat to low-medium and cook for 10 minutes or until most of the liquid has been absorbed. Remove from heat when done but keep covered for 5 minutes before serving so that it can continue cooking in its own steam.
